African Peanut Tofu Stew

Ingredients: Tofu, yam, white rice, onion, ground garlic, ground ginger, cumin, peanuts, tomato paste, vegetable bouillon, kale, sugar, salt.

This meal kit contains

  • tofu
  • diced yams and onion
  • tomato paste
  • peanut butter
  • spice packet
  • kale
  • white rice (1 cup)

You will also need

  • any kind of cooking oil (for example, olive oil, canola oil, vegetable oil)
  • salt and pepper
  1. Cook the white rice using your favorite method!
    See the Tips & Tricks section at the bottom of the page for directions on how to cook white rice.
  2. While the rice is cooking, heat a generous splash of oil (two or three spoonfuls) in a pot over medium heat. Add the diced onion and yams and cook for 4-5 minutes, stirring frequently, until onion is clear and fragrant.
  3. Add tofu and a generous pinch of salt and pepper. Cook for about 4-5 minutes more, stirring frequently, until tofu is lightly browned.
  4. Add the tomato paste and peanut butter and stir until everything is evenly mixed. Add 1 cup of water, and then add the spices and another pinch of salt and pepper. Stir to dissolve the peanut butter and spices. Cover the pot and turn the heat up to medium-high.
  5. Once the stew reaches a boil, turn the heat down to medium-low, add the kale, and allow it to simmer uncovered for about 8-9 minutes. Add salt and pepper to taste.
    If you find some thick stems in your kale, feel free to rip those off - they won't become tender unless you cook them for a longer period of time.
  6. Spoon the stew over the cooked rice and enjoy!

Tips & Tricks

Not sure how to cook white rice? Measure out 2 cups of water for every cup of rice and bring it to a boil in a small pot. Rice expands, so make sure the pot is at least twice as big as the volume of the water. When the water is boiling, add rice and a pinch of salt to the pot, turn the heat down to low, and cover the pot. Cook for 18-25 minutes, or until the rice is tender and no longer crunchy. Fluff with a fork and serve!
